Brut IPA – Azacca

This is a style that is new to the brewing world but is catching traction very quickly. Our version consists of a pilsner base malt, malted oats and a touch of acidulated malt. Azacca hops used both in the kettle and for dry hopping totaling in 22lbs used in this brew. In order for this beer to attenuate down to zero, towards the end of fermentation we added an enzyme to convert the remaining sugars for the yeast to consume. This leads to a very dry and crisp beer but yet still very easy to drink. Coming in at 6.7% ABV and 14 IBU’s, this ale is bursting with hop aromas and flavors that could be considered as tropical fruit hop character!
